DON’T ask Brian Garland what the secret is to his popular, lip-smacking pickles because he won’t tell you.
He did tell The Hunter River Times but we are sworn to secrecy so you won’t hear it from us either.
What Brian will say is that nothing goes to waste from his vegetable garden. He is also known to sneak a few vegetables from friends and the veggie patch at Singleton Men’s Shed also offers some fine pickings from time to time.
Brian has been making his pickles and relish for years and says no two batches turn out the same.
He is currently selling his wares from the Men’s Shed and the community is welcome to pop down and buy some.
While we won’t give too much away, Brian’s advice is to experiment with your recipes which can be refined to exactly how you like them.
Brian’s tomato relish contains tomatoes, vinegar, sugar, turmeric, salt, mustard powder, curry powder and flour.
His green tomato relish contains cauliflower, broccoli, tomatoes, onion, sugar, vinegar, golden syrup, mustard, flour, curry powder and salt and pepper.
It is up to you as to the measurements and cooking times but Brian said practice makes perfect.
